Focus on potassium

As a nutrition adviser, I often see clients with insufficient vitamin and mineral intakes and potassium seems to be one mineral that people know they need but have no idea what it does.
Potassium is one of the 6 Macrominerals your body needs to daily in order to maintain regular enzyme and cellular activity. Potassium in particular is involved in muscle, cell and nerve function as well as fluid balance.
Consuming potassium-rich foods can help lower blood pressure. A lack of potassium can cause fatigue, weakness and mental confusion.
Although the recommended amount of potassium is 3,500mg/day, the average adult in the UK only gets about 2/3 of that.

Sources of potassium

Great sources of potassium include: avocado, spinach and sweet potato.
These ingredients all feature in my winter salad (photo below). I will post the ingredients in the comments .
