
Cod and Lemon Canellini Beans
A tasty cod supper packed with protein and fibre.
Ingredients
- 2 fillets cod
- 1/8 tsp sea salt
- 1 tbsp avocado oil
- 1 whole garlic clove (minced)
- 1 tsp thyme (chopped)
- 1/2 cup cherry tomatoes (halved)
- 1/3 cup chicken broth
- 1 can canellini beans
- 3 cups rocket
- 1 tbsp lemon juice
- 3 tbsp pitted kalamata olives
- 1 whole egg
- 1/2 cup breadcrumbs
Instructions
- Beat the egg. Dip the cod in the egg then the breadcrumbs. Add the avocado oil to the pan then add the cod. Cook for a few minutes per side, until cooked through. Remove from the pan and set aside. (note the photo does not show the final dish as this recipe has been edited.)
- In the same pan, reduce the heat to medium-low and add the garlic. Cook for one minute, then add the thyme and cherry tomatoes. Cook for 2 to 3 minutes. Add the chicken broth and beans and let it simmer for 3 to 5 minutes. Add the rocket, lemon juice and olives and stir until the rocket is wilted.
- Divide the bean and vegetable mix between plates and top with the cod. Enjoy!
