
Grilled Courgette and Couscous Salad
A summery salad that's filling and easy to make.
Ingredients
- 1 cup Couscous (uncooked)
- 1.25 cups Vegetable Broth (hot)
- 1.5 tsp Raw Honey
- 1 tbsp White Wine Vinegar
- 2 tbsp Extra Virgin Olive Oil
- 1 cup Courgette (sliced lengthways)
- 1/3 cup Feta (diced)
- 1 tsp Lemon Zest
- 1/4 cup Mint Leaves (finely chopped)
Instructions
- Preheat the grill to medium-high heat.
- Place the couscous in a bowl and pour the hot broth over top. Cover and let it stand for five minutes or until the broth has been absorbed.
- Make the dressing by whisking together the honey, cumin, vinegar, and half of the oil.
- Brush the remaining oil onto the courgette slices. Grill for two to three minutes per side or until tender.
- To serve, place the courgette, feta, and couscous on a serving plate. Season with the lemon zest and mint and top with the dressing. To serve, divide evenly between plates and enjoy!
