Grilled Courgette and Couscous Salad

A summery salad that's filling and easy to make.

Ingredients
  

  • 1 cup Couscous (uncooked)
  • 1.25 cups Vegetable Broth (hot)
  • 1.5 tsp Raw Honey
  • 1 tbsp White Wine Vinegar
  • 2 tbsp Extra Virgin Olive Oil
  • 1 cup Courgette (sliced lengthways)
  • 1/3 cup Feta (diced)
  • 1 tsp Lemon Zest
  • 1/4 cup Mint Leaves (finely chopped)

Instructions
 

  • Preheat the grill to medium-high heat.
  • Place the couscous in a bowl and pour the hot broth over top. Cover and let it stand for five minutes or until the broth has been absorbed.
  • Make the dressing by whisking together the honey, cumin, vinegar, and half of the oil.
  • Brush the remaining oil onto the courgette slices. Grill for two to three minutes per side or until tender.
  • To serve, place the courgette, feta, and couscous on a serving plate. Season with the lemon zest and mint and top with the dressing. To serve, divide evenly between plates and enjoy!

Notes

This is a simple but tasty salad with summery vibes from lemon and mint.
Full of flavour from the courgettes and feta and very filling.
