
Lentil Goulash
Ingredients
- 1 tbsp extra virgin olive oil
- 1 onion diced
- 4 garlic cloves minced
- 2 red peppers diced
- 3 yellow potatoes peeled and diced
- 2 cups lentils cooked
- 1 tbsp paprika
- 1.5 cups vegetable broth
- 1 can chopped tomatoes
Instructions
- Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until the onion softens, about five minutes.
- Add the peppers, potatoes, lentils, paprika, vegetable broth, and diced tomatoes. Bring to a boil and simmer for 25 to 30 minutes, or until the potatoes are fork tender. Season with salt, serve, and enjoy!
Notes
This is such an easy midweek supper.
If you want to be quick, use tinned lentils.
If you have a bit more time you can add uncooked lentils to the pot and let it cook down for longer.
