Peanut Butter Chocolate Chip Muffins

An easy bake for the kids to enjoy (and you with a cuppa!)

Ingredients
  

  • 200 g Self Raising Flour
  • 1 tsp Baking Powder
  • 1/3 tsp Salt
  • 2/3 cup Oat Milk
  • 1 whole Egg
  • 1/2 cup Maple Syrup
  • 1/2 cup Peanut Butter (all natural)
  • 2/3 cup Chocolate Chips
  • 1 tsp Vanilla Extract

Instructions
 

  • Preheat the oven to 350ºF (175ºC) and line a muffin tray with liners.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • Add the milk, egg, maple syrup, peanut butter, and vanilla to the same bowl as the flour. Use a spatula and stir until just combined. Fold in the chocolate chips.
  • Divide the batter evenly between muffin cups. Bake for 22 to 26 minutes or until firm to the touch and a toothpick inserted comes out clean. Let the muffins cool in the pan for 10 to 15 minutes before removing and transferring to a cooling rack to cool completely. Enjoy!

It’s always a good idea to have some healthy takes on kids’ snacks for when they’re looking for a sweet treat. These muffins are easy to make and taste great.
