
Peanut Butter Chocolate Chip Muffins
An easy bake for the kids to enjoy (and you with a cuppa!)
Ingredients
- 200 g Self Raising Flour
- 1 tsp Baking Powder
- 1/3 tsp Salt
- 2/3 cup Oat Milk
- 1 whole Egg
- 1/2 cup Maple Syrup
- 1/2 cup Peanut Butter (all natural)
- 2/3 cup Chocolate Chips
- 1 tsp Vanilla Extract
Instructions
- Preheat the oven to 350ºF (175ºC) and line a muffin tray with liners.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Add the milk, egg, maple syrup, peanut butter, and vanilla to the same bowl as the flour. Use a spatula and stir until just combined. Fold in the chocolate chips.
- Divide the batter evenly between muffin cups. Bake for 22 to 26 minutes or until firm to the touch and a toothpick inserted comes out clean. Let the muffins cool in the pan for 10 to 15 minutes before removing and transferring to a cooling rack to cool completely. Enjoy!
