Cod and Lemon Canellini Beans
A tasty cod supper packed with protein and fibre.

- 2 fillets cod
- 1/8 tsp sea salt
- 1 tbsp avocado oil
- 1 whole garlic clove (minced)
- 1 tsp thyme (chopped)
- 1/2 cup cherry tomatoes (halved)
- 1/3 cup chicken broth
- 1 can canellini beans
- 3 cups rocket
- 1 tbsp lemon juice
- 3 tbsp pitted kalamata olives
- 1 whole egg
- 1/2 cup breadcrumbs
Beat the egg. Dip the cod in the egg then the breadcrumbs. Add the avocado oil to the pan then add the cod. Cook for a few minutes per side, until cooked through. Remove from the pan and set aside. (note the photo does not show the final dish as this recipe has been edited.)
In the same pan, reduce the heat to medium-low and add the garlic. Cook for one minute, then add the thyme and cherry tomatoes. Cook for 2 to 3 minutes. Add the chicken broth and beans and let it simmer for 3 to 5 minutes. Add the rocket, lemon juice and olives and stir until the rocket is wilted.
Divide the bean and vegetable mix between plates and top with the cod. Enjoy!
